Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 1 packet taco seasoning mix
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 14.5 oz diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 onion chopped
  • 2 cloves garlic minced

  • 1 bell pepper chopped
  • 1 jalapeño diced
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced

Instructions
 

Preparation

  • Chop the onion, bell pepper, and jalapeño if using. Mince the garlic and set aside.
  • Rinse and drain the black beans, kidney beans, and corn in a colander.
  • Place the chicken breasts at the bottom of the crockpot. Sprinkle the taco seasoning over the chicken, then add the beans, corn, diced tomatoes, onion, and garlic.
  • Pour the chicken broth over all the ingredients, ensuring everything is submerged.
  • Set the crockpot to low and cook for 6-8 hours, or until the chicken is fully cooked and tender.

Serving

  • Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot.
  • Taste the soup and adjust the seasoning with salt, pepper, and lime juice as needed.
  • Ladle the soup into bowls and garnish with your choice of toppings such as cheese, avocado, or cilantro.

  • Allow the soup to cool and store in airtight containers. It can be refrigerated for up to 4 days or frozen for up to 3 months.
