  • 1 can black beans drained and rinsed
  • 1 cup corn kernels

  • 1 tsp paprika
  • Salt and pepper to taste

Preparation

  • Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until fragrant. Add ground beef, breaking it apart. Cook until browned and drain excess fat. Season with cumin, paprika, salt, and pepper.
  • Rinse the rice under cold water. In a pot, combine rice and water, bring to a boil. Reduce heat, cover, and simmer until the rice is cooked and water is absorbed.
  • In a separate pot, heat the black beans and corn over low heat until warm.

Assembly
