Ingredients
  

Family-Style Parmesan Chicken Meatloaf

  • 2 lb ground chicken
  • 1 cup breadcrumbs
  • 3/4 cup milk
  • 3/4 cup finely grated Parmesan cheese
  • 3 large eggs
  • 4 cloves garlic finely minced
  • 1 1/2 tsp salt
  • 3/4 tsp black pepper
  • 1 1/2 tsp Italian seasoning
  • 3 tbsp olive oil
  • 3 tbsp fresh parsley chopped, optional

Optional Parmesan Topping

  • 1/3 cup grated Parmesan cheese
  • 1 tbsp olive oil

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a large loaf pan or rimmed baking sheet with parchment paper to support easy lifting and serving.
  • In a large bowl, combine breadcrumbs and milk. Stir briefly and let sit for 1 to 2 minutes until fully absorbed.
  • Add ground chicken, Parmesan cheese, eggs, minced garlic, salt, black pepper, Italian seasoning, olive oil, and parsley if using. Mix gently until just combined.
  • Transfer the mixture into the prepared pan or shape into a wide loaf on the baking sheet. Smooth the surface lightly without compacting.
  • If using the optional topping, mix Parmesan and olive oil and spread evenly over the top of the loaf.
  • Bake for about 45 minutes, or until the internal temperature reaches 165°F and the exterior is lightly golden.
  • Remove from the oven and let rest for at least 10 minutes before slicing for clean, family-style portions.
  • Transfer to a serving platter, slice thickly, and serve at the center of the table.

Notes

This family-size meatloaf can be assembled up to 24 hours in advance and baked just before serving. Leftovers store well up to 3 days.
