Ingredients
  

Salad

  • 6 cups chopped kale or spinach
  • 1 large apple diced
  • 1/2 cup dried cranberries
  • 1/2 cup roasted pecans
  • 1/4 cup red onion thinly sliced
  • 1/2 cup crumbled feta cheese

Grilled Chicken

  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1 tsp dried oregano

Dressing

  • 1/4 cup balsamic vinaigrette

Instructions
 

Preparation

  • In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, pepper, and oregano. Place chicken breasts in a resealable plastic bag and pour marinade over them. Seal the bag and refrigerate for at least 30 minutes.
  • Preheat your grill or grill pan to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side, or until fully cooked. Let rest for a few minutes, then slice thinly.
  • In a large mixing bowl, combine chopped kale or spinach, diced apple, dried cranberries, roasted pecans, sliced red onion, and crumbled feta cheese.
  • Add the sliced grilled chicken to the salad mixture. Drizzle with balsamic vinaigrette and toss until well combined.

Serving

  • Serve the salad immediately for the freshest taste and texture. If desired, add more dressing to taste.
