  • 1 lb boneless skinless chicken breasts, diced Approximately 450 g
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup bell peppers, diced (any color)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt & pepper, to taste
  • 1 Tbsp olive oil (for cooking)
  • Optional: fresh parsley, chopped, for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Heat olive oil in a large skillet over medium heat. Add the diced chicken, seasoning with salt, pepper, and Italian seasoning. Cook for about 5–7 minutes, stirring occasionally, until the chicken is just browned and mostly cooked through. Remove from heat and set aside.
  • In the same skillet, add the diced onion and minced garlic. Sauté for 2–3 minutes until the onion becomes translucent and fragrant.
  • Add broccoli, cauliflower, and bell peppers to the skillet. Cook for an additional 4–5 minutes until the vegetables begin to soften.

Mixing

  • In a mixing bowl, combine the heavy cream, shredded cheddar cheese, and grated Parmesan cheese. Stir until well blended and creamy, then pour over the chicken and vegetable mixture. Mix thoroughly to ensure everything is evenly coated.
  • Transfer the mixture into a greased 9x13-inch baking dish. Spread it out evenly.

Baking

  • Bake in the preheated oven for 30–35 minutes or until the top is golden and bubbly, and the casserole is heated through.
  • Once out of the oven, allow it to cool for a few minutes. Garnish with fresh parsley before serving.

Notes

Use leftover rotisserie chicken for an even quicker preparation. Experiment with your favorite low-carb vegetables like zucchini or spinach. For extra flavor, add some crushed red pepper flakes for a mild kick. This casserole freezes well, making it ideal for meal planning.
