Ingredients
  

Ground Beef Meatballs

  • 1 1/2 lb ground beef
  • 3/4 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 3 cloves garlic, minced
  • 1/2 cup onion, finely chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil

Mashed Potatoes

  • 2 lb russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tbsp butter
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Mix breadcrumbs and milk in a bowl and let sit for 1 to 2 minutes.
  • Add ground beef, egg, garlic, onion, salt, pepper, and Italian seasoning and mix gently.
  • Shape into meatballs, place on the baking sheet, drizzle with olive oil, and bake for 18 to 20 minutes.
  • Boil potatoes until fork-tender, then drain and mash with butter, milk, salt, and pepper.
  • Serve meatballs hot with mashed potatoes.

Notes
