  • 2 medium sweet potatoes peeled and diced

Preparation

  • Peel and dice the sweet potatoes. Dice the bell pepper and onion. Mince the garlic.
  • In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the ground turkey and cook until browned, breaking it up with a spatula.
  • Stir in the onion, bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.
  • Add the diced sweet potatoes, smoked paprika, cumin, salt, and pepper. Stir to combine.
  • Reduce the heat to low, cover, and let simmer for 10-15 minutes, or until the sweet potatoes are tender.

Serving

  • Remove from heat and let sit for a few minutes. Garnish with fresh herbs if desired and serve hot.
