Equipment

  • 1 Mixing Bowl large
  • 1 Electric Mixer
  • 1 Serving Platter

Ingredients

Sandwich Ingredients

  • 16 slices of white or whole grain bread
  • 2 large cucumbers thinly sliced

Cream Cheese Spread

  • 8 oz cream cheese softened
  • 2 tbsp fresh dill chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

Preparation

  • In a large mixing bowl, combine softened cream cheese, dill, lemon juice, salt, and pepper. Use an electric mixer to blend until smooth and well combined. Adjust seasoning to taste.
  • Arrange the slices of bread on a clean surface. For a neater presentation, trim the crusts off each slice.
  • Spread a generous layer of cream cheese mixture on one side of each bread slice. Arrange cucumber slices evenly over half of the bread slices.
  • Top the cucumber-layered slices with the remaining bread slices, cream cheese side down, to form sandwiches. Press gently to adhere.
  • Using a sharp knife, cut each sandwich into quarters or desired shapes for serving.
  • Arrange the sandwiches on a serving platter. Serve immediately or keep covered with a damp cloth until ready to serve.

Storage

  • Place leftover sandwiches in an airtight container, lined with a damp paper towel, and refrigerate for up to 2 days.
