Ingredients

  • 10 oz fresh spinach
  • 5 large eggs
  • 1 1/2 cups milk
  • 1 cup crumbled feta cheese
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

  • 1/2 cup sautéed onions
  • 1/4 cup chopped bell peppers

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) while you prepare the ingredients.
  • Wash and sauté spinach in a pan over medium heat until wilted, then set aside to cool slightly.
  • In a large mixing bowl, whisk together the eggs and milk until well combined.
  • Add the crumbled feta, shredded cheddar, and sautéed spinach to the egg mixture. Season with salt and pepper, and stir to incorporate.
  • Grease a 9-inch pie dish and pour the quiche mixture into it, spreading evenly.
  • Place the dish in the preheated oven and bake for 50 minutes, or until the quiche is set and the top is golden brown.
  • Allow the quiche to cool for a few minutes before slicing to help it set.

Serving

  • Slice the quiche into 8 servings and enjoy it warm or at room temperature.

  • Store leftover quiche in an airtight container in the refrigerator for up to 4 days, or wrap slices individually and freeze for up to 2 months.
