Ingredients
  

Apple Slaw

  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 apple thinly sliced
  • 1/4 cup vinaigrette dressing
  • Salt and pepper to taste

Chicken

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper to taste

Sandwich Assembly

  • 4 whole-grain sandwich buns

Instructions
 

Preparation

  • In a large mixing bowl, combine shredded cabbage, carrots, and apple slices. Pour vinaigrette dressing over the mixture and toss to coat evenly. Season with salt and pepper. Cover and refrigerate for at least 15 minutes to allow flavors to meld.
  • Season the chicken breasts with salt and pepper on both sides. Drizzle with olive oil to prevent sticking while cooking.

Cooking

  • Heat a grill pan over medium heat. Add the chicken breasts and cook for 6-8 minutes per side, or until golden brown and fully cooked through. Remove from heat and let rest for 5 minutes before slicing.
  • While the chicken rests, lightly toast the sandwich buns on a skillet or in a toaster until golden brown.

Assembling

  • Slice the rested chicken into thin strips. Place a generous portion of apple slaw on the bottom half of each toasted bun, top with sliced chicken, and finish with the top half of the bun. Serve immediately.
