Sweet Potato Mixture

  • 3 medium sweet potatoes, peeled and diced
  • ½ cup brown sugar (packed)
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp vanilla extract
  • ¼ cup unsalted butter, melted
  • ½ cup milk (or as needed for creaminess)

Topping

  • 1 cup chopped pecans
  • mini marshmallows (optional for topping) Add during the last 15 minutes of cooking.

Preparation

  • Begin by preparing the sweet potatoes. Peel and chop them into approximately one-inch pieces to ensure even cooking in the crockpot.
  • Place the diced sweet potatoes into the slow cooker.
  • In a separate bowl, combine the brown sugar, cinnamon, nutmeg, vanilla, and melted butter. Stir well to create a spiced mixture.
  • Pour the spiced mixture over the sweet potatoes in the slow cooker. Add the milk gradually, mixing until well combined.

Cooking

  • Cover and cook on low for about four hours, stirring occasionally.
  • During the last 15 minutes of cooking, add mini marshmallows on top if desired.

Mashed Sweet Potatoes

  • Once the sweet potatoes are fork-tender, mash them to your desired consistency. You can leave some chunks for texture or blend until smooth.
  • Taste and adjust the sweetness or spices as needed.

Finishing Touches

  • Stir in the chopped pecans for crunch and optionally garnish with additional pecans before serving.

Notes

For added flavor, consider roasting the sweet potatoes in the oven before adding them to the slow cooker. This dish freezes well, so consider making a double batch.
