Ingredients

  • 1.5 lbs boneless chicken breasts or thighs
  • 1 lb baby potatoes halved
  • 1 lb fresh asparagus chopped
  • 1 cup baby carrots
  • 1 onion thinly sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh thyme

  • 1/4 cup white wine
  • 1 tsp Dijon mustard
  • 1/2 cup peas

Instructions
 

Preparation

  • Wash and trim all vegetables. Chop asparagus into bite-sized pieces, halve the potatoes, and mince the garlic. Slice the onion thinly.
  • Pat the chicken dry with paper towels and season both sides with salt and pepper.

Cooking

  • Place the chicken at the bottom of the crockpot. Add the vegetables on top, followed by garlic, onion, chicken broth, and lemon juice. Sprinkle the herbs over the top.
  • Cover and set the crockpot to cook on low for 6-7 hours or on high for 3-4 hours. Ensure the chicken is fully cooked and the vegetables are tender.

Serving

  • Once done, serve the chicken and vegetables hot, garnished with additional fresh herbs as desired.

Storage

  • Transfer any leftovers to an airtight container and refrigerate for up to 3 days. Reheat in the microwave or on the stovetop before serving.
