  • 2 lbs boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 flour tortillas

Instructions
 

Preparation

  • Place the chicken breasts in the crockpot. Pour the chicken broth over them, and sprinkle the taco seasoning on top. Cover and cook on low for 4-5 hours, until the chicken is tender.
  • Once cooked, remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the crockpot and mix with the cooking juices.

Assemble the Quesadillas

  • Lay each tortilla flat. Sprinkle cheese on one half, add shredded chicken, and fold the tortilla over to form a half-moon shape.
  • Place the assembled quesadillas back into the crockpot, layering with parchment paper to prevent sticking.

Cooking

  • Set the crockpot to the 'keep warm' setting and let the quesadillas warm for about 30 minutes, allowing the cheese to melt nicely.
