  • 2 large English cucumbers
  • 8 oz cream cheese softened
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh dill chopped
  • 2 tbsp capers drained

Preparation

  • Preheat your oven to 400°F. Season the salmon fillet with salt and pepper. Place it on a lined baking sheet and bake for 15-20 minutes, until the salmon is cooked through and flakes easily. Let it cool slightly before flaking into small pieces with a fork.
  • While the salmon is baking, slice the cucumbers into rounds about 1/4 inch thick. Arrange them on a serving platter.
  • In a medium mixing bowl, combine the softened cream cheese, lemon juice, and chopped dill. Mix until smooth and well combined. Season with salt and pepper to taste.
  • Spread a small amount of the cream cheese mixture on each cucumber round. Top with a generous portion of flaked salmon and a few capers.
