Ingredients

  • 2 cups shredded rotisserie chicken
  • 4 large flour tortillas
  • 2 cups shredded cheese such as cheddar or Monterey Jack
  • 2 tbsp butter or oil for frying

Optional Add-ons

  • 1/4 cup sliced jalapeños
  • 1/4 cup diced onions
  • 1/4 cup chopped cilantro

Instructions
 

Preparation

  • Shred the rotisserie chicken and season with your choice of spices if desired.
  • Lay a tortilla flat, sprinkle with cheese, and layer with shredded chicken and optional add-ons. Fold in half.

Cooking

  • Place a skillet over medium heat and add butter or oil.
  • Place the folded quesadilla in the skillet. Cook each side for 3-4 minutes until golden brown and crispy.
  • Remove from the skillet and let cool for a minute. Slice into wedges and serve with your favorite sides.

Storage

  • Place leftover quesadillas in an airtight container with parchment paper between slices. Store in the refrigerator for up to 3 days.
