  • 2 lbs boneless skinless chicken breasts
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tbsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 large eggs
  • 8 Hawaiian rolls

Preparation

  • Cut the chicken into slider-sized pieces and marinate them in a bowl with buttermilk, paprika, salt, and pepper for at least 1 hour.
  • In a separate bowl, combine flour, cornstarch, paprika, salt, and pepper. In another bowl, beat the eggs.
  • Dredge marinated chicken pieces in the flour mixture, dip in the beaten eggs, and then coat again in the flour mixture.

Cooking

  • Heat oil to 350°F in a deep fryer or skillet. Fry chicken in batches for 6-8 minutes until golden brown and cooked through. Drain on a wire rack.
  • Slice Hawaiian rolls in half and lightly toast them in the oven or on a skillet.

Serving

  • Place a piece of fried chicken on the bottom half of each roll, top with coleslaw and pickles, and cover with the top bun.
  • Serve the sliders warm with a selection of dipping sauces on the side.

Storage

  • Store any leftover sliders in an airtight container in the refrigerator for up to 2 days. Reheat in a preheated oven at 350°F for 10 minutes before serving.
