  • 2-3 large russet potatoes, peeled and diced into 1-inch cubes Use starchy potatoes for the best texture.
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper, to taste
  • 2 Tbsp fresh parsley, minced (for garnish)
  • 1 tsp smoked paprika (optional) For extra flavor.
  • 1/2 cup bell peppers or onions, diced (optional)

Instructions
 

Preparation

  • Begin by placing the diced potatoes in a large pot and covering them with cold water. Add a pinch of salt and bring to a boil. Simmer for about 10 minutes until just tender, then drain and cool slightly.

Cooking

  • Heat the olive oil in a large skillet over medium-high heat. Once hot, add the par-boiled potatoes to the skillet, spreading them evenly.
  • Sprinkle the garlic powder, onion powder, salt, and pepper over the potatoes. Cook undisturbed for 5-7 minutes until golden brown and crispy.
  • Gently stir the potatoes to flip them, continue cooking for another 5-7 minutes, adding the smoked paprika and any optional ingredients until evenly browned and crispy.
  • Remove from heat and transfer to a serving dish. Garnish with fresh parsley before serving.

Notes

Experiment with spices like cayenne or Italian seasoning for different flavors. Store leftovers in an airtight container and reheat in the oven for crispiness.
