Chicken

  • 2 lbs boneless skinless chicken breasts
  • 2 tbsp olive oil

Blackened Seasoning

  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Tacos

  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1 avocado sliced
  • 1/2 cup sour cream
  • Fresh cilantro for garnish

Preparation

  • In a mixing bowl, combine all the blackened seasoning ingredients. Coat the chicken breasts with olive oil and rub the seasoning all over them. Let the chicken marinate for at least 30 minutes.
  • Preheat the oven to 400°F. Place the seasoned chicken on a baking sheet lined with parchment paper. Bake for 25 minutes or until the chicken is cooked through.
  • Once the chicken is baked, let it rest for a few minutes to allow the juices to redistribute. Then, slice the chicken into strips.
