  • 2 cans 15 oz each white beans, drained and rinsed
  • 1 can 4 oz green chilies, diced
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

  • 1 cup corn kernels
  • 1/2 cup chopped bell peppers
  • 1/2 tsp cayenne pepper

Instructions
 

Preparation

  • Preheat your oven to 350°F. Combine shredded chicken, white beans, and green chilies in a large mixing bowl. Add garlic powder, onion powder, salt, and pepper. Mix well to combine.
  • In a separate bowl, whisk together chicken broth and sour cream until smooth. Pour this mixture over the chicken and bean mixture, stirring to coat evenly.
  • Transfer the mixture to a greased 9x13-inch baking dish. Spread out evenly and top with shredded cheddar cheese.
  • Bake in the preheated oven for 30-40 minutes, or until the cheese is melted and bubbly. The edges should be lightly golden brown.

Serving

  • Allow the casserole to cool for a few minutes before serving. This allows the flavors to meld together. Serve warm with your choice of side dishes.
