  • 4 pieces salmon fillets (about 6 oz each, skin-on or skinless)
  • 1 Tbsp olive oil
  • to taste Salt & pepper
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped (packed in oil)
  • 2 cups fresh spinach, roughly chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Optional fresh basil or parsley for garnish

  • Heat the olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper, then carefully place them in the hot skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds, stirring constantly until fragrant. Be cautious not to burn it.
  • Add the chopped sun-dried tomatoes to the skillet and cook for about 2 minutes.
  • Pour in the heavy cream and stir, bringing the mixture to a gentle simmer. Add the Parmesan cheese and Italian seasoning, stirring continuously until the cheese has melted and the sauce is smooth and creamy.
  • Fold the chopped spinach into the sauce. Cook for another 2-3 minutes until the spinach wilts.
  • Return the salmon to the skillet, spooning creamy sauce over the top. Let it simmer for an additional minute to warm the salmon through before garnishing and serving.

Notes

For added flavor, try marinating the salmon in lemon juice and herbs for 30 minutes before cooking. A splash of white wine can enhance the sauce as well. This dish is great for meal prep; it tastes better the following day after the flavors meld.
