  • 2 large sweet potatoes peeled and cubed
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese

Preparation

  • Peel and cube the sweet potatoes. Boil them in a pot of salted water until tender, about 15 minutes. Drain and set aside.

Cooking

  • In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion and minced garlic, and sauté until softened. Add the ground beef, breaking it apart with a spoon, and cook until browned. Season with salt and pepper.
  • Stir in the cooked sweet potatoes, sour cream, and shredded cheese into the beef mixture. Mix until the cheese is melted and the ingredients are well combined.
  • If desired, mix in the black beans and diced bell pepper. Cook for an additional 5 minutes to heat through.

Serving

  • Spoon the mixture into bowls and garnish with fresh cilantro if desired. Serve warm.
