  • 2 lbs chicken breasts
  • 4 cups chicken broth
  • 3 large potatoes diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1/2 cup cheddar cheese grated (optional)
  • 2 tbsp fresh parsley chopped (optional)
  • 1 tsp thyme
  • 1/2 cup cooked bacon bits optional

  • Dice the potatoes, chop the onion, and mince the garlic. Set these aside for later use.
  • Place the chicken breasts at the bottom of the slow cooker. Add the diced potatoes, onions, and garlic on top of the chicken.
  • Pour the chicken broth over the ingredients in the slow cooker. Season with salt, pepper, and thyme.
  • Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooked, remove the chicken breasts, shred them using two forks, and return the shredded chicken to the slow cooker.
  • Stir in the heavy cream and, if using, the cheddar cheese. Ensure everything is mixed well.
  • Add the bacon bits and fresh parsley if desired. Let the soup cook for an additional 15 minutes.
