  • 1 pound shrimp peeled and deveined
  • 9 ounces cheese tortellini
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup chopped spinach
  • 1 onion diced
  • 2 cloves garlic minced

Preparation

  • Rinse the shrimp under cold water and pat dry. Season with salt and pepper.
  • Bring the chicken broth to a boil in a large pot. Add tortellini and cook until al dente. Remove tortellini with a slotted spoon and set aside.
  • In the same pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until onion is translucent.
  • Add shrimp to the pot and cook until pink, about 3-4 minutes.
  • Pour in heavy cream and return tortellini to the pot. Add spinach and let it wilt. Adjust seasoning with salt and pepper. Simmer for 10 minutes.

Serving

  • Ladle the soup into bowls and garnish with fresh parsley. Serve immediately.
