  • 1 lb chicken breast cut into bite-sized pieces
  • 8 oz mushrooms sliced
  • 1 package 16 oz potato gnocchi
  • 1 bulb garlic roasted
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat oven to 400°F. Slice the top off the garlic bulb, drizzle with olive oil, and wrap in foil. Roast for 30 minutes until soft.
  • Slice mushrooms and cut chicken into bite-sized pieces. Bring a pot of salted water to a boil for the gnocchi.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned and cooked through, about 7 minutes.
  • Add gnocchi to boiling water and cook until they float, about 2-3 minutes. Reserve 1/2 cup of pasta water before draining.
  • Add mushrooms to the chicken in the skillet and cook until soft, about 5 minutes.

Assembly

  • Squeeze roasted garlic into the skillet, add cream and parmesan, and let simmer until thickened. Stir in gnocchi and reserved pasta water to reach desired consistency.

Serving

  • Serve hot, garnished with extra parmesan and freshly chopped parsley.

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
