Equipment

  • 1 Large pot
  • 1 Baking Sheet for roasting
  • 1 Blender optional for smoother texture

Ingredients

Main Ingredients

  • 2 cups roasted chicken shredded
  • 1 head cauliflower cut into florets
  • 1 cup sharp cheddar cheese shredded
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

Preparation

  • Preheat your oven to 400°F. Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
  • While cauliflower roasts, prepare the chicken. Season with salt and pepper, roast alongside cauliflower or use pre-roasted chicken.

Cooking

  • In a large pot, sauté diced onion and minced garlic in olive oil until translucent and fragrant.
  • Add the roasted cauliflower, chicken, chicken broth, and bring to a simmer.
  • Stir in heavy cream and cheddar cheese. Allow to simmer, stirring occasionally. For a smoother soup, blend part of the soup and return to the pot.
  • Taste and adjust seasoning with additional salt, pepper, and a pinch of cayenne if desired.

Serving

  • Ladle the chowder into bowls. Garnish with extra cheddar cheese and chopped parsley. Serve hot.

Storage

  • Allow leftovers to cool, then store in an airtight container in the refrigerator for up to 3 days.
