Preparation

  • Heat a tablespoon of olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, then stir in the garlic.
  • Stir in the pumpkin puree, canned tomatoes, and vegetable broth. Bring to a boil, then reduce to a simmer for about 20 minutes. Season with salt, pepper, and nutmeg.
  • Use an immersion blender to blend the soup until smooth and creamy. Stir in the heavy cream and heat through.
  • Butter one side of each bread slice, place buttered side down in a skillet over medium heat. Add cheese between two slices, cook until golden brown, then cut into croutons.
