Preparation

  • Dice the onion and mince the garlic. Measure out the pumpkin puree, broth, and cream. Grate the parmesan cheese.
  • In a large pot, heat a tablespoon of olive oil over medium heat.
  • Add the diced onion and minced garlic to the pot. Cook until the onion becomes translucent and fragrant.
  • Stir in the pumpkin puree and vegetable broth. Bring the mixture to a gentle simmer.
  • Add the pasta to the pot, ensuring it's covered by the liquid. Stir occasionally to prevent sticking.
  • Allow the pasta to cook as it absorbs the pumpkin broth. If necessary, add more broth for additional liquid.

Making the Sauce

  • Once the pasta is al dente, reduce the heat. Stir in the heavy cream, sage, and nutmeg until well combined.
  • Add the grated parmesan cheese, stirring until it melts into the sauce. Season with salt and pepper to taste.

Serving

  • Dish the pasta into bowls and top with additional parmesan if desired. Serve hot.
