Ingredients
  

For the shrimp and sauce

  • 1 lb 1 lb (≈450 g) large shrimp, peeled and deveined Use fresh shrimp for the best taste; frozen shrimp can be used but should be thawed first.
  • 4 cloves 4 cloves garlic, minced
  • 1 cup 1 cup heavy cream
  • 2 Tbsp 2 Tbsp unsalted butter 1 Tbsp for cooking shrimp, 1 Tbsp for the sauce.
  • 1 Tbsp 1 Tbsp olive oil
  • Salt and pepper, to taste
  • ½ cup ½ cup grated Parmesan cheese

For the mashed potatoes

  • 1 lb 1 lb (≈450 g) potatoes, peeled and cubed
  • ½ cup ½ cup milk (for mashed potatoes) Adjust for desired consistency.

Garnish

  • Optional: fresh parsley, chopped, for garnish
  • Optional: lemon wedges, for serving Adds brightness.

Preparation

  • Begin by boiling the potatoes. Place the peeled and cubed potatoes in a large pot and cover them with cold salted water. Bring to a boil and let them simmer for about 15 minutes, or until they are fork-tender. Drain and set aside.

Cooking the Shrimp

  • While the potatoes are cooking, heat the olive oil and 1 tablespoon of butter in a non-stick skillet over medium heat. Once the butter has melted and begins to bubble, add the minced garlic. Sauté for about 1-2 minutes, or until fragrant but not browned.
  • Add the shrimp to the skillet with the garlic. Season with salt and pepper. Cook for 3-4 minutes, turning occasionally, until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

Making the Sauce

  • In the same skillet, pour in the heavy cream and bring it to a gentle simmer. Stir in the remaining tablespoon of butter and the grated Parmesan cheese. Continue cooking for about 2-3 minutes, until the sauce thickens slightly. Stir in the cooked shrimp and coat them in the sauce.

Mashed Potatoes

  • Meanwhile, prepare the mashed potatoes. In a mixing bowl, combine the drained potatoes, milk, and additional salt and pepper to taste. Mash until smooth and creamy, ensuring there are no lumps.

Serving

  • To serve, spoon a generous portion of mashed potatoes onto each plate. Top with the creamy garlic shrimp and finish with a sprinkle of chopped parsley. Arrange lemon wedges on the side for an extra touch of brightness.

Notes

For more flavor, feel free to add a splash of white wine when cooking the garlic. Be careful not to overcook the shrimp; they cook quickly and become tough if left too long. This dish pairs well with steamed vegetables or a simple green salad for added freshness.
