  • 8 oz rotini pasta
  • 1 cup dill pickles chopped
  • 1 cup cheddar cheese cubed
  • 1/2 cup red onion finely chopped

Dressing

  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp dill pickle juice
  • 1 tbsp fresh dill chopped
  • Salt and pepper to taste

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to cool down.
  • While the pasta is cooking, chop the dill pickles, cheddar cheese, and red onion. Set aside.
  • In a small bowl, whisk together the mayonnaise, sour cream, dill pickle juice, fresh dill, and salt and pepper until smooth.

Mixing

  • In a large mixing bowl, combine the cooked pasta, chopped dill pickles, cheddar cheese, and red onion.
  • Pour the prepared dressing over the pasta mixture. Gently toss until all ingredients are evenly coated.

Serving

  • Refrigerate the salad for at least an hour before serving to allow the flavors to meld.
  • Garnish with additional fresh dill if desired and serve chilled.

  • Transfer any leftovers to an airtight container and store in the refrigerator for up to three days.
