Preparation

  • Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium heat.
  • Place the chicken in the skillet and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

Make the Sauce

  • In the same skillet, add minced garlic and cook until fragrant. Add cherry tomatoes and corn, and cook until the tomatoes start to soften.
  • Stir in the heavy cream and half of the chopped basil. Let it simmer for 3-4 minutes until the sauce thickens slightly.

Combine and Finish

  • Place the cooked chicken back into the skillet, nestling it into the sauce. Simmer for another 5 minutes.
  • Sprinkle the remaining basil over the dish before serving. Serve hot and enjoy!
