Equipment

  • 1 Large pot for cooking curry
  • 1 Cutting board
  • 1 Knife

Ingredients

Main Ingredients

  • 1 lb chicken breasts diced
  • 2 medium sweet potatoes peeled and cubed
  • 1 cup coconut milk
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated

Spices

  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • Salt and pepper to taste

Instructions

Preparation

  • Dice the chicken into bite-sized pieces. Peel and cube the sweet potatoes. Chop the onion, mince the garlic, and grate the ginger.
  • In a large pot, heat some oil over medium heat. Add the chopped onions and sauté until translucent. Add the garlic and ginger, cooking until fragrant.

Cooking

  • Add the diced chicken to the pot and cook until lightly browned. Stir in the curry powder, cumin, and turmeric, mixing well to coat the chicken.
  • Pour in the coconut milk and add the sweet potatoes. Stir to combine, ensuring the potatoes are submerged in the liquid. Bring to a simmer, then reduce heat to low and cover.
  • Let the curry simmer for about 30 minutes, or until the chicken is cooked through and the sweet potatoes are tender. Stir occasionally to prevent sticking.

Serving

  • Season the curry with salt and pepper to taste. Garnish with fresh cilantro before serving hot with rice or naan.

Storage

  • Let the curry cool completely before transferring to an airtight container. Refrigerate for up to three days. Reheat gently on the stove, adding a splash of water if needed.
