  • 3 cups fresh spinach
  • 1 package 20 oz cheese tortellini
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat. Saute minced garlic until fragrant. Add fresh spinach and cook until wilted. Remove from heat and set aside. In the same skillet, add shredded chicken, season with salt and pepper, and cook until heated through.
  • Bring a large pot of salted water to a boil. Add cheese tortellini and cook until they float to the surface, about 2-3 minutes. Drain and set aside.
  • In a mixing bowl, combine heavy cream and chicken broth. Stir in shredded mozzarella and Parmesan cheeses until well mixed.
  • Preheat oven to 375°F. In a large mixing bowl, combine cooked tortellini, chicken, spinach, and sauce. Mix until everything is evenly coated. Transfer to a greased baking dish.

Serving

  • Cover the baking dish with aluminum foil and bake for 30 minutes. Remove foil and bake an additional 10-15 minutes, or until the top is golden and bubbly. Allow to cool slightly before serving.

  • Transfer any leftovers to an airtight container and refrigerate for up to 3 days. Reheat in the oven or microwave before serving.
