Soup Base

  • 2 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery sliced

Main Ingredients

  • 1 lb boneless skinless chicken breasts, cubed
  • 1 cup long-grain rice
  • 6 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

  • Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened but not browned.
  • Add the cubed chicken to the pot and cook until browned on all sides. Stir frequently to ensure even cooking.
  • Stir in the rice, making sure it is well coated with the oil and vegetable mixture.
  • Pour in the chicken broth and bring to a boil. Reduce the heat to low and let the soup simmer until the rice is tender and the chicken is cooked through, about 30 minutes.
  • Gradually stir in the heavy cream, making sure it is fully incorporated. Season with salt and pepper to taste.
