  • 1 lb ground beef
  • 1 cup wild rice uncooked
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup mushrooms sliced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

  • 1/2 cup chopped bell peppers
  • 1/2 cup frozen peas
  • 1 tsp smoked paprika

Instructions
 

Preparation

  • Chop the onion, mince the garlic, and slice the mushrooms. Gather all ingredients and have them ready for cooking.
  • In a large skillet, brown the ground beef over medium heat until fully cooked. Remove from skillet and set aside.
  • In the same skillet, add onions, garlic, and mushrooms. Cook until onions are translucent and mushrooms are tender.
  • Add cooked beef back to the skillet, along with the uncooked wild rice and beef broth. Simmer until rice is partially cooked.

Serving

  • Transfer mixture to a greased casserole dish. Stir in heavy cream and half of the cheddar cheese. Top with remaining cheese. Cover with foil and bake in a preheated oven at 375°F for 30 minutes. Remove foil and bake for an additional 10 minutes.
  • Let the casserole cool slightly before serving. Cut into slices and enjoy.

  • Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat thoroughly before serving.
