Equipment

  • 1 Sheet Pan lined with parchment paper
  • 1 Mixing Bowl medium
  • 1 Basting Brush

Ingredients

Main Ingredients

  • 4 chicken thighs bone-in, skin-on
  • 1 cup cranberries fresh or frozen
  • 1/4 cup Dijon mustard
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 2 cups Brussels sprouts halved
  • 2 carrots sliced
  • 1 red onion quartered

Instructions

Preparation

  • Preheat the oven to 400°F. Line a sheet pan with parchment paper. Pat the chicken thighs dry with paper towels and season them with salt and pepper.
  • In a medium bowl, combine cranberries, Dijon mustard, honey, olive oil, and minced garlic. Mix well until the cranberries are slightly mashed and the mixture is homogenous.
  • Place the chicken thighs on the prepared sheet pan. Brush them generously with the cranberry mustard glaze. Arrange the Brussels sprouts, carrots, and red onion around the chicken.
  • Bake in the preheated oven for 40-50 minutes, or until the chicken is cooked through and the vegetables are tender, stirring the vegetables halfway through cooking.

Serving

  • Transfer the chicken and vegetables to a serving platter. Spoon any remaining glaze from the pan over the chicken. Garnish with fresh herbs if desired.

Storage

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.

How to Serve: This dish pairs well with a simple green salad or crusty bread.
Storage & Freshness: For best results, consume within 3 days.
