  • 2 delicata squash halved and seeded
  • 1 cup canned chickpeas drained and rinsed
  • 1/2 cup dried cranberries
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste

Preparation

  • Preheat oven to 400°F. Line a baking sheet with parchment paper. Halve and seed the delicata squash, then place them cut side up on the baking sheet. Drizzle with olive oil and season with salt and pepper.
  • Roast the squash in the oven for 30 minutes, or until the flesh is tender and the edges are golden brown.
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent. Stir in chickpeas, cranberries, thyme, and rosemary. Cook for another 5 minutes, seasoning with salt and pepper.
  • Remove the squash from the oven and let cool slightly. Spoon the chickpea mixture into each squash half, packing it in tightly.
  • Return the stuffed squash to the oven and bake for an additional 10-15 minutes until the filling is hot and slightly crisp on top.

Serving

  • Remove from oven and let cool slightly before serving. Garnish with fresh herbs if desired.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
