Equipment

  • Mini muffin pan
  • Saucepan

Ingredients

Pastry Bites

  • 1 sheet puff pastry, thawed
  • 4 oz brie cheese, cut into small cubes
  • 1/3 cup thick cranberry sauce
  • 1/4 cup honey
  • 1 tsp fresh rosemary, finely chopped

Instructions

  • Preheat the oven to 400°F and lightly grease a mini muffin pan to prevent sticking.
  • Lightly flour a clean work surface and roll the puff pastry slightly to even out the thickness.
  • Cut the puff pastry into evenly sized squares suitable for the muffin cavities.
  • Press each pastry square gently into the muffin pan to form shallow pastry cups.
  • Place a small cube of brie cheese into the center of each pastry cup.
  • Spoon a small amount of thick cranberry sauce on top of the brie in each cup.
  • Bake the pastry bites for 16 to 18 minutes until the pastry is puffed, crisp, and golden.
  • While the pastry bakes, add the honey and chopped rosemary to a small saucepan.
  • Warm the honey gently over low heat for 2 to 3 minutes to infuse the rosemary, then remove from heat.
  • Remove the baked pastry bites from the oven and allow them to cool for a few minutes.
  • Drizzle the warm rosemary honey lightly over each pastry bite.
  • Serve the cranberry brie puff pastry bites warm for best texture and flavor.

Notes

Use thick cranberry sauce and avoid overfilling to maintain clean pastry structure.
