Cobbler Filling

  • 2 pounds boneless skinless chicken thighs, cut into bite-sized pieces

  • 3 cloves garlic minced
  • 2 cups chicken broth

Dumplings

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter cubed
  • 1 cup milk

Instructions

  • In a large skillet, heat olive oil over medium heat. Add chicken pieces and cook until browned. Remove and set aside.
  • In the same skillet, add diced onion and garlic. Sauté until onions are translucent. Add chicken broth, mixed vegetables, thyme, salt, and pepper. Return chicken to the skillet.
  • In a medium mixing bowl, combine flour, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in milk just until moistened.

Serving

  • Preheat oven to 375°F. Pour the chicken and vegetable mixture into a baking dish. Drop spoonfuls of dumpling dough over the top.
  • Bake in the preheated oven for 30-35 minutes until dumplings are golden brown and cooked through. Let cool for a few minutes before serving.
