  • Dice the red and green bell peppers, tomatoes, and red onion into small, uniform pieces. Chop the cilantro finely.
  • In a large mixing bowl, combine the drained black beans, corn, diced bell peppers, tomatoes, red onion, and cilantro.
  • In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
  • Pour the dressing over the bean and vegetable mixture. Toss gently to coat all ingredients evenly.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
  • Serve chilled with tortilla chips or as a topping for grilled meats.
