Ingredients
  

Chicken

  • 1 lb skinless boneless chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Rice

  • 2 cups jasmine rice
  • 4 cups water
  • 1 tbsp olive oil

Cucumber Tomato Salad

  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup kalamata olives sliced
  • 1/4 cup feta cheese crumbled

Instructions
 

Preparation

  • Combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper in a bowl. Add the chicken and coat well. Let it marinate for at least 30 minutes, or refrigerate overnight for best results.
  • Rinse the jasmine rice under cold water until the water runs clear. In a rice cooker, add the rice, water, and a tablespoon of olive oil. Cook according to the manufacturer's instructions.
  • Heat a grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, until cooked through. Let it rest for a few minutes before slicing.

Serving

  • In each bowl, place a portion of rice, slices of grilled chicken, and top with cherry tomatoes, cucumber, red onion, olives, and feta cheese. Drizzle with additional olive oil if desired.

  • Store the prepared bowls in airtight containers in the refrigerator for up to 4 days. For best results, keep the salad separate until ready to serve.
