  • 1 tbsp lemon juice

Instructions
 

Preparation

  • Preheat the oven to 375°F. Line a baking sheet with parchment paper. Place the salmon fillets on the sheet and season with lemon juice, dill, salt, and pepper.
  • In a bowl, toss baby potatoes with olive oil, salt, and pepper. Arrange them on the baking sheet around the salmon.
  • Bake the salmon and potatoes in the preheated oven for 25-30 minutes, or until the salmon is cooked through and the potatoes are tender.
  • In a small mixing bowl, whisk together Greek yogurt, chopped dill, lemon juice, salt, and pepper. Adjust seasoning to taste.

Serving

  • Divide the baked potatoes and salmon among four bowls. Drizzle with the dill yogurt sauce and garnish with additional dill and lemon slices.
