Ingredients
  

Chicken

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Vegetables

  • 2 cups butternut squash peeled and diced
  • 1 cup Brussels sprouts halved
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Additional Ingredients

  • 2 cups mixed greens
  • 1 apple thinly sliced
  • 1/4 cup pecans toasted
  • 2 tbsp balsamic glaze

Instructions
 

Preparation

  • Season the chicken breasts with olive oil, salt, pepper, and thyme. Heat a skillet over medium-high heat and sear the chicken until golden brown on both sides, about 5 minutes per side. Transfer to a baking sheet and finish in a 350°F oven for 10-15 minutes until cooked through.
  • Toss the butternut squash and Brussels sprouts with olive oil, salt, and pepper. Spread them on a baking sheet and roast at 400°F for 20-25 minutes until tender and caramelized.
  • While the chicken is resting, prepare the remaining ingredients by slicing the apple and toasting the pecans in a dry skillet over medium heat until fragrant.

Serving

  • In each bowl, place a bed of mixed greens. Top with sliced chicken, roasted vegetables, apple slices, and toasted pecans. Drizzle with balsamic glaze before serving.
