  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 bell pepper diced
  • 1/2 cup red onion thinly sliced

Dressing and Toppings

  • 1 cup Italian dressing
  • 1/2 cup Parmesan cheese grated
  • Salt and pepper to taste

Preparation

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, following the package instructions. Drain and rinse under cold water to cool.
  • While the pasta is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and bell pepper, and slice the red onion thinly.

Mix the Salad

  • In a large mixing bowl, combine the cooked spaghetti, cherry tomatoes, cucumber, bell pepper, and red onion.
  • Pour the Italian dressing over the pasta and vegetables. Toss to combine, ensuring everything is evenly coated.
  • Sprinkle the grated Parmesan cheese over the salad. Season with salt and pepper to taste, and toss once more.

Serving

  • Transfer the salad to a serving platter. Garnish with additional Parmesan cheese or fresh herbs if desired. Serve chilled or at room temperature.

Storage

  • Place any leftover salad in an airtight container and store in the refrigerator for up to 3 days. Stir before serving to redistribute the dressing.
