Ingredients
  

Chicken

  • 1 whole chicken about 4 lbs
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 lemon halved
  • 4 sprigs fresh rosemary

Vegetables

  • 4 large carrots peeled and cut into chunks
  • 4 potatoes quartered
  • 1 onion quartered
  • 4 cloves garlic crushed

Preparation

  • Preheat your oven to 425°F (220°C). This ensures that the chicken will roast evenly and acquire a beautiful golden color.
  • Pat the chicken dry with paper towels. Rub it all over with olive oil, salt, and pepper. Place the lemon halves inside the cavity along with the rosemary sprigs.
  • Place the carrots, potatoes, onion, and garlic in the roasting pan. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  • Place the chicken breast-side up on a rack over the vegetables. Roast for about 90 minutes, or until the internal temperature reaches 165°F (75°C) when checked with a meat thermometer.
  • Every 30 minutes, baste the chicken with the juices from the pan and rotate the pan for even cooking. This helps to keep the chicken moist and flavorful.
  • Once roasted, remove the chicken from the oven and let it rest for 10 minutes before carving. This allows the juices to redistribute, ensuring tender meat.
  • Carve the chicken and serve it alongside the roasted vegetables. Garnish with fresh rosemary for an aromatic touch.
  • Store any leftover chicken and vegetables in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
