Ingredients

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup bell peppers diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup cucumber diced

Dressing

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • Salt and pepper to taste

Preparation

  • Boil a large pot of salted water. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water.
  • While the pasta is cooking, chop the cherry tomatoes, bell peppers, red onion, and cucumber. Set aside.

Mix the Ingredients

  • In a large mixing bowl, combine the cooked pasta and chopped vegetables. Toss gently to combine.
  • In a separate bowl, whisk together mayonnaise, sour cream, apple cider vinegar, garlic powder, salt, and pepper until smooth.
  • Pour the dressing over the pasta and vegetables. Toss until everything is evenly coated.
