Ingredients
  

Chimichurri Sauce

  • 1 cup fresh parsley chopped
  • 1/2 cup fresh cilantro chopped
  • 4 cloves garlic minced
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • Salt and pepper to taste

Steak and Bowls

  • 2 lbs flank steak
  • 2 cups cooked quinoa or brown rice
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1 bell pepper sliced

Instructions
 

Preparation

  • Combine parsley, cilantro, garlic, and red wine vinegar in a mixing bowl. Gradually whisk in olive oil until well blended. Season with salt and pepper to taste. Set aside.
  • Place the steak in a shallow dish and pour half of the chimichurri sauce over it. Ensure the steak is well coated. Cover and let it marinate in the refrigerator for at least 30 minutes.
  • If using a grill, preheat to medium-high heat. If using a grill pan, heat over medium-high on the stovetop.
  • Remove the steak from the marinade and place it on the grill. Cook for 4-5 minutes on each side or until desired doneness is reached. Let it rest for 5 minutes before slicing thinly against the grain.

Assembly

  • Distribute the cooked quinoa or brown rice evenly among 8 meal prep containers. Top each with sliced steak, cherry tomatoes, avocado, and bell pepper.
  • Drizzle remaining chimichurri sauce over each bowl. Seal the containers and store in the refrigerator.

Serving

  • Enjoy the meal prep bowls cold or reheat them for a few minutes before serving. Add extra chimichurri sauce if desired.

  • Keep the bowls in the refrigerator for up to 4 days. For best results, store the chimichurri sauce separately and add before serving.
