Ingredients
  

Chimichurri Sauce

  • 1 cup fresh parsley chopped
  • 1/2 cup fresh cilantro chopped
  • 4 cloves garlic minced
  • 2 tbsp red wine vinegar
  • 1/2 cup olive oil
  • Salt and pepper to taste

Salmon Skewers

  • 1.5 lbs salmon fillets cut into 1-inch cubes
  • 1 red bell pepper cut into 1-inch pieces
  • 1 red onion cut into wedges

Instructions
 

Preparation

  • In a mixing bowl, combine parsley, cilantro, and garlic. Stir in red wine vinegar and olive oil. Season with salt and pepper. Mix well and set aside.
  • Place the salmon cubes in a shallow dish. Pour half of the chimichurri sauce over the salmon, reserving the rest for serving. Toss to coat evenly. Marinate in the refrigerator for 30 minutes.

Grilling

  • Thread salmon cubes onto skewers, alternating with bell pepper and onion pieces. Make sure not to overcrowd each skewer.
  • Preheat grill to medium-high heat. Place skewers on grill and cook for 3-4 minutes per side, brushing with reserved chimichurri sauce throughout grilling.
  • Once cooked through and slightly charred, remove skewers from grill. Serve hot with additional chimichurri sauce on the side.

Serving

  • Serve the skewers with a side of fresh salad or rice. Pair with a crisp white wine or iced tea for a refreshing meal.
