Ingredients
  

Salad

  • 4 cups watermelon cubed
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped

Dressing

  • 1/4 cup balsamic vinegar
  • 1 tbsp honey

Preparation

  • Cut the watermelon into even cubes and place them on a serving platter.
  • Sprinkle the crumbled feta cheese evenly over the watermelon cubes.
  • Finely chop the fresh mint leaves and sprinkle them over the salad.
  • In a small saucepan, combine balsamic vinegar and honey. Simmer over low heat until reduced by half and syrupy.
  • Drizzle the balsamic glaze over the watermelon and feta.
  • Season with freshly ground black pepper to taste.
  • Place the salad in the refrigerator for 10 minutes before serving to enhance the flavors.
