Chicken Marinade

  • 1 lb chicken breasts sliced

  • 2 tbsp fresh dill chopped
  • 2 tbsp olive oil
  • 1 tsp salt

Rice

  • 1 cup basmati rice
  • 2 cups chicken broth (instead of water)
  • 1/2 tsp salt (or omit if using salted broth)

  • 1/4 cup fresh dill chopped
  • 1 lemon cut into wedges

Preparation

  • Combine lemon juice, dill, olive oil, salt, and pepper in a mixing bowl. Add chicken slices and toss to coat. Cover and refrigerate for at least 20 minutes.
  • Rinse the rice under cold water. In a pot, bring water and salt to a boil. Add rice, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  • Heat a grill pan over medium-high heat. Remove chicken from marinade and cook for 5-7 minutes on each side until fully cooked.

  • Divide cooked rice among bowls. Top with chicken slices, a sprinkle of dill, and lemon wedges. Serve immediately.
