Ingredients
  

Chicken Marinade

  • 1 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • Juice of 1 lemon

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cucumber grated
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • Salt to taste

Salad

  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 red onion sliced
  • 1/2 cup feta cheese crumbled

Instructions
 

Preparation

  • In a mixing bowl, combine olive oil, red wine vinegar, garlic, oregano, and lemon juice. Add the chicken breasts and coat thoroughly. Marinate for at least 30 minutes.
  • Preheat your grill pan or outdoor grill to medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked through. Let it rest for a few minutes before slicing.

Tzatziki Sauce

  • In a bowl, mix Greek yogurt, grated cucumber, minced garlic, and lemon juice. Season with salt and refrigerate until ready to use.

Assembling the Salad

  • On a large platter, spread the chopped romaine lettuce evenly.
  • Top the lettuce with halved cherry tomatoes, sliced red onion, and crumbled feta cheese.
  • Place the sliced grilled chicken on top of the salad and drizzle generously with the prepared tzatziki sauce.

Serving and Storage

  • Serve immediately with additional tzatziki on the side for dipping.
  • Store leftover salad in an airtight container in the refrigerator for up to 2 days. Keep tzatziki sauce separate to maintain freshness.
